Britt Davis grew up near Napa Valley, California, where his passion for wines and flavors first took root. Over the years he explored vineyards and kitchens across six continents, learning directly from winemakers, chefs, and cultures that shape the world’s most iconic wine regions. And then he chose Kilgore, Texas.
Why here? Because East Texas deserved it. Because the people here are curious, generous, and hungry for something that elevates their everyday. Because this building called to Britt. This is what turns a local wine bar into a destination.
Chapter Three
The World Came Home to East Texas
Britt Davis grew up near Napa Valley, California — as close to wine royalty as American geography allows. Over the following decades, he explored vineyards and kitchens across six continents, learning directly from winemakers, chefs, and cultures that shape the world’s most iconic wine regions.
He could have opened anywhere. He chose Kilgore — because East Texas deserved it. Because the people here are curious, generous, and hungry for something that elevates their everyday. Davis and his team continues restoring the Elder School — stripping drop ceilings, refinishing floors, hand-building furnishings — transforming it into a warm, intimate space that honors what came before it.
“I want this to be a destination for people to come from all over East Texas. We’re sitting in a
building with a real story. People deserve to know it.”
